The First 48 Hours

Before anything was signed, we looked.

Two days inside the operation, before a single recommendation. What we found: a 28-item all-day menu with an unclear offer and photography working against it. A 40-seat site whose kitchen struggled past ten simultaneous covers. Two electric hobs, pans washed between dishes, no flat top, no assembly organisation. Vacuum-packing that would not survive an inspection. A bar building six fresh juice combinations from scratch, fifteen minutes for two juices. An uncalibrated coffee machine. Raw-egg dishes leaving the pass.

The Turning Point

Then the inspector walked in.

While we were still in the building, the EHO arrived unannounced. The result was not what the owners expected. We took the report to them and talked through what it would take to fix, not cosmetically but structurally. They signed a three month engagement the next day.
